We have evolved on the Earth from single-celled organisms to the complex beings that we are today. This process unfolded over trillions of years. Because we evolved alongside microorganisms, every function in our bodies is affected by, and often performed by them. Bacteria play a role in just about everything. The largest colonies of bacteria live inside of our gut. These beneficial flora protect against infection, promote vitamin and mineral absorption, eliminate harmful bacteria, enhance the immune system, provide a physical barrier along the gut wall, control the acidity of their environment, neutralize harmful substances, take part in the balance and production of hormones, and much much more.

In this class students will learn the basic methods of fermentation! We will participate in creating a couple of fermented foods and discuss why it is so beneficial. From classic foods such as sauerkraut and yogurt, to medicinal tonics such as beet kvass and root beer, this class will make a fermented food expert out of anyone.

In the spirit of Botanica! Festival, we will focus on using medicinal plants in our ferments. The recipes we make will utilize seasonal ingredients and all class materials will be included.

Kelsey Conger is a Certified Herbalist + Holistic Nutritionist based out of Lafayette, CO. After recovering from chronic illness, Kelsey became devoted to helping others discover the power of plant medicine. She believes that through rekindling our connection to our local ecosystems, through food, farming, and medicine choices, we can begin to heal the environmental crises we are faced with.

She studied herbal medicine at both the Dandelion Herbal Center and Chestnut School of Herbal Medicine. In addition, she graduated with a Bachelor’s in Psychology and Environmental Studies from Naropa Univeristy, where she focused her thesis work on the intimate connection between personal and planetary health.

She currently works as an herbalist at Rebecca’s Apothecary in downtown Boulder. Kelsey lives on Three Leaf Farm where she and her partner tend to their ducks and honeybees, and enjoy a fair bit of farming and gardening.
